Alternative to bussing push carts in dining room

This really bugs me a lot: the bussing push carts in the dining room in those old school Vietnamese and pho restaurants in North America.

I don't even remember seeing this kind of obscenity in restaurants in Vietnam!

There has to . be a better way. Anyone care to share ideas so we can bring pho/Viet foodservice to the next level?
